Peppermint Patties

If you like peppermint and chocolate, these are

going to knock your socks off!

Forget all the crap you can buy in the store!

If you’re looking for a sweet treat, these are a great option with ingredients that are super easy to get and much better than any store bought preservative laden product.

Ingredients (I often double this recipe):

  • 1/2 cup extra virgin coconut oil
  • 1/8 cup of raw honey
  • 1 tsp vanilla extract
  • 6 drops of CPTG Peppermint Essential Oil
  • 1 cup of gluten/dairy free chocolate chips (Enjoy Life are our favorite)

Instructions:

  • You will need to make sure the coconut oil is softened prior to combining. Combine all ingredients except chocolate chips in a medium sized bowl until they are well mixed. Place the mixed ingredients in the refrigerator.
  • Melt the Chocolate Chips in a double boiler until it is in a thick liquid form.
  • Line a mini-muffin pan with mini liners or use a silicone mold.
  • Fill each liner with about 1 tsp of chocolate to coat the bottom.
  • Place pan in the freezer to solidify the bottom layer- leave in for 10 minutes.
  • Remove from freezer and scoop 1 tbsp of mixture onto each liner.
  • Place pan back in the freezer to solidify another 10 minutes.
  • Remove from freezer and cover each cup with remaining chocolate.
  • Return to the freezer to set the final step.
  • Remove when you are ready to serve!

*You will want to store them in the refrigerator or the freezer as the chocolate and coconut oil may melt if left out.
